Yes that is pretty much part of my job so they food cost % is lower. Beef Trimmings  become mince for burgers for example.

What I recommend is buying a bag of frozen  diced mirepoix and diced onions and keeping them in your freezer for this reason.

I end up having several tubs of Bolognese frozen from different weeks that end up making a lasagne at the end of the month.

You should only home cooked freeze things for one month by the way.
