To be fair mummies and other undead tend to be enemies rather than option to be PCs so I would never think them to become option in any setting outside WoD. As we talked about races that players can choose I must mention that I do think that WotC missed opportunity to test bigger PCs with Loxodon race in Ravnica setting and it would had been interesting thing to do.
